It was drizzling in Calgary at 7:15am this morning as we drove to City TV for Vine and Dine’s debut on Breakfast TV, so we were glad that we had chosen to pair both a red wine and a white wine with a warm and a cold salad.
The wines were perfect matches for the salads and were both chosen carefully as they not only have superb pedigrees but certainly over-deliver on value too.
With host Jill Belland to give a helping hand, we dressed the first salad, *‘Roast Garlic Caesar Salad’ to pair with:
Los Vascos Chardonnay, $15.49, 14% ABV,90 Points Wine Spectator
Los Vascos (meaning “The Basques”, after the Echenique family who came to Chile in 1750 and planted the first vineyard in this location) is owned by Domaines Barons de Rothschild-Lafite. They visited many properties and tasted very many wines before choosing Los Vascos, because of its location just 40K from the Pacific Ocean and its exceptional soil. Along with ideal weather conditions, Los Vascos also benefits from intense exposure to the sun, semi-arid soils and little risk of frost.
This Chardonnay has vibrant aromas of grapefruit and melon with a zesty and lively taste of citrus, tropical fruit and roasted nuts. It is meant to be drunk young, and Rothschild-Lafite recommend opening it at least an hour before drinking to allow the flavours to open up. Serving at a temperature of between 10-12° C will reduce acidity and accent the earthier flavours in the wine for ideal balance.
We paired the Chardonnay with the Roasted Garlic Caesar Salad as the nutty overtones in the wine complement the cheese and garlic flavours while the acidity contrasts the creaminess of the dressing. It would pair equally well with grilled salmon, any seafood served with a squeeze of lemon, veal escalope, creamy pasta and chicken dishes, and soft creamy cheeses.
