Warm weather is still with and thank goodness so are the farmers’ markets. Tulsa has had a record breaking hot summer, but the Tulsa Farmers’ Markets are still providing fresh and tasty produce.
Tomatoes, onions, cucumbers, bell peppers and other vegetables can be found. Fruits including strawberries, melons and peaches are ripe and ready to enjoy.
A great way to enjoy a grilled cheese sandwich out of the ordinary is with a couple of slices of fresh tomatoes. Whether you use a Panini grill or just a skillet putting together a grilled cheese sandwich is simple. American, provolone, Swiss or cheddar cheese slices, fresh whole wheat, French or rye bread slices. Assemble your sandwiches, with bread and cheese, add 2 or 3 slices of tomatoes, sprinkle tomatoes with freshly ground pepper and celery salt. Spread a thin layer of softened butter on outside of bread slices. Grill to golden perfection.
An easy dessert that your children will love to help preparing and eating is a Fruit Pizza. Using one roll of sugar cookie dough, roll out to a round large circle or rectangle. Bake cookie per instructions on package, let cool.
In mixing bowl combine 2 – 8 oz. packages softened cream cheese, 1 cup powdered sugar, 2 tsp. vanilla or almond flavoring, stir until well blended and smooth (can add a few drops of milk if needed for spreading consistency).
Spread cream cheese filling over cookie leaving a 1 inch edge. Place fruit over top of pizza and chill. Sliced peaches or nectarines, sliced strawberries, grape halves, sliced kiwi or pears, sliced oranges (peeled), crushed pineapple, maraschino cherry halves, blueberries or raspberries are among many fruits that can be used on this fruit pizza. Slice and serve.
