Following with my summer seafood theme, I decided to publish my recipe for shrimp scampi. Everyone has heard of shrimp scampi and most have had good versions; however, this recipe is actually from Italy and promises to beat out any restuarant version that you have ever had!! And believe it or not, it’s actually pretty easy to make.
1 lb. shrimp, cleaned, deveined, and rinsed in cold water
2 to 3 tbsp olive oil
2 to 3 cloves garlic, sliced
2 tsp lemon juice
Saute garlic in olive oil. Add shrimp, lemon juice, and splash of white wine. Saute shrimp until pink. Serve over bed of linguini.
Favorite: the best thing about this dish is how easy it is–it’s authentic Italian cuisine and only 5 ingredients!!
least favorite: slicing fresh cloves of garlic is a pain in the butt, same with cleaning the shrimp :(
