Even though most salads do start out with lettuce, some salads do not. Mediterranean Style Salad is one such salad. This salad includes a tangy dressing and can be prepared the day before serving and would go well with beef kabobs or other grilled meats or fish.
Mediterranean Style Salad
- 2 c. raw cauliflower (chopped)
- 2 c. fresh green beans (cut into 1-2 inch in length)
- 1 red bell pepper (chopped)
- 1 small jar artichokes
- 1/2 c. green onions (sliced)
- 1 c. stuffed olives (cut in half or sliced)
- 1 clove garlic (minced)
- 1/3 c. olive oil
- 3 T. white vinegar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2/3 c. feta cheese (crumbled)
Place cauliflower, green beans and bell pepper into boiling water. Cook until crisp but tender. Drain and chill. Combine vegetables into large bowl, add artichokes, onions and olives; stir. In small shaker or bowl, mix together garlic, olive oil, vinegar, salt and pepper until well blended. Pour dressing over vegetables. Chill for several hours or over night. Remove from refrigerator, drain. Place salad in serving bowl, sprinkle with feta cheese.
