“This is the one of the best grilled corn I have ever tasted.” The butter, garlic and cheese perk up the flavor and make it hard to resist. A great side dish for your Labor Day cookout!
What You Need:
(Makes: 8 servings)
8 medium ears of sweet corn in husks
1/3 cup of butter, cubed
1/2 teaspoon of garlic, minced
1/4 teaspoon of salt
1/4 cup of grated Parmesan cheese
What to Do:
STEP 1) Soak the corn in cold water for 20 minutes. Meanwhile, in a small saucepan, combine the butter, garlic and salt. Cook and stir over medium heat until butter is melted; set aside 2 tablespoons.
STEP 2) Carefully peel back the corn husks to within 1 inch of bottoms; remove the silk. Brush with remaining butter mixture. Rewrap corn in husks and secure with kitchen string.
STEP 3) Grill the corn, covered, over medium heat for 25-30 minutes or until tender, turning occasionally. Cut the string and peel back husks. Drizzle corn with reserved butter mixture; sprinkle with cheese.
