Who’s ready for dessert? Our three course meal is almost complete. Top the evening off with this velvety smooth chocolate mousse that is flavored with orange. This make-ahead dessert is super easy and better than any mousse that you can get at a restaurant.
To achieve that bright orange flavor, the zest of a whole orange is steeped in some of the cream and then strained out so that only the flavor remains.
If you will be using the same whisk attachment for both the egg whites and the cream, always be sure to beat the egg whites first. The reason? If there is even a trace of fat on the whisk, the egg whites will not whip up property.
For best results, use a good quality chocolate like Ghiradelli. Reasor’s carries several varieties of Ghiradelli chocolates on the baking aisle.
Chocolate Orange Mousse
- 2 cups heavy cream
- Zest of I orange
- 8 oz. semisweet chocolate
- 4 large egg whites
Pour one cup of the cream into a large saucepan and add orange zest. Bring to a boil over medium heat. Remove from heat and let steep for 5 minutes. Strain mixture through a fine mesh strainer to remove zest. Return cream to saucepan and bring back to a boil. Remove pan from the heat and add the chocolate. Let stand for a couple of minutes and then stir until smooth. Pour this mixture into a large bowl or a large measuring cup until lukewarm.
In a mixer bowl with whisk attachment, beat egg whites on high speed until stiff peaks form. They should be stiff, but not dry.
Add remaining cream to another mixer bowl with whisk attachment. Beat the cream until stiff peaks form. Set aside.
Add a third of the beaten eggs whites to the chocolate mixture. Mix vigorously. Gently fold in the remaining egg whites until no traces of white can be seen. Fold the whipped cream into the chocolate mixture.
Spoon the mouse into individual serving dishes or into a large bowl. Cover directly with plastic wrap and chill for about 3-4 hours.
