Minnesota is experiencing an extreme heat wave this week. With temperatures and humidity this high, it feels like we are in New Orleans instead of Minneapolis. The best thing you can do when it is this hot is to cool off with a refreshing treat, like this Frozen Blueberry Lemonade.
Sit on the patio and make up a batch of this frozen lemonade and enjoy the heat that we only experience for a few months before winter sets in again. This drink is delicious. It is slightly tart from the lemonade, slightly sweet from the blueberries, perfectly cold from the crushed ice and perfectly refreshing with the fresh mint. I will definitely be making this again since the weather won’t be cooling down anytime soon.

Frozen Blueberry Lemonade (recipe from Real Simple)
1 1/2 cups blueberries
1 cup lemonade
1/2 cup fresh mint leaves, plus more for serving
1/4 cup confectioners’ sugar
In a blender, puree the blueberries, lemonade, mint, confectioners’ sugar, and 3 cups ice until smooth.
Garnish with mint sprigs.
